Random recipe you might enjoy

Andrew and I made this for dinner this week and it's a keeper! If you try it, let me know what you think! I found the recipe on this website.

Chicken Bake with Potato Crust

3 cups mashed hot potato
1 cup shredded cheddar cheese
2.8 oz french fried onions
1 1/2 cups cubed cooked chicken
1 pkg.(10oz) frozen veggies (we used frozen corn)
1 can cream of chicken soup
1/4 cup milk
1/2 tsp ground mustard
1/4 tsp garlic powder
salt and pepper to taste

Directions
- Preheat oven to 375
- In a medium bowl combine mashed potatoes, 1/2 cup cheese and 1/2 the can of the french fried onions; mix well
- Spoon potato mixture into a greased casserole dish. Spread up sides to make a nice potato shell. ( do not use a long casserole dish)
- In a large bowl, combine chicken, mixed veggies, soup, milk and spices pour into the shell
- Bake uncovered, at 375 for 30 minutes... until nice and bubbly
- Top with remaining cheese and french fried onions and bake uncovered for 3 or so minutes until nice and brown
